The Kitchen Cupboard~ Salsa And Yummy Guacamole!


I haven't written a recipe in a while so here are some mouth watering favorites.


Tomato Salsa -

2 (14.5-ounce) cans diced tomatoes
2 cloves garlic, minced
2 jalapenos, seeded and chopped
1 bunch fresh cilantro, chopped ( I don't really like cilantro so I skip it..)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 onion, chopped

In the container of a blender or food processor, combine tomato, garlic, jalapeno, cilantro, salt, and pepper. Pulse to desired consistency. Add onion, and pulse three times. Cover, and chill. It's so good ~ 

Roasted Corn, Pepper And Black Bean Salsa -

4 roma tomatoes, cut in half lengthwise
2 poblano peppers, cut in half lengthwise
2 cups fresh corn kernels ( about 3 -4 ears)
1 (15-ounce) can black beans, drained and rinsed
4 green onions, sliced
1/4 cup olive oil
2 tablespoons lime juice
1 clove garlic, minced
3/4 teaspoon salt
1/4 teaspoon ground black pepper

Preheat oven to 500'degree's. Line a rimmed baking sheet with aluminum foil.
Place tomatoes and peppers, skin side up, on prepared baking sheet. Sprinkle corn kernels around peppers. Bake for 20 minutes, or until vegetables look blistered.
Place tomatoes and peppers in a resealable plastic bag; seal, and let stand 10 minutes to loosen skins. Peel and chop tomatoes. Peel peppers; remove and discard seeds, and finely chop. Place chopped tomatoes, peppers, and corn  in a large bowl. Add black beans, green onions, oil, lime juice, garlic, salt, and pepper, stirring to combine. Delish!

 Megan's-  Holy Guacamole-

4 avocado's, pitted, peeled, and coarsely chopped
2 roma tomatoes, seeded and chopped
1 half red onion finely chopped, minced
1 clove garlic, minced
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
( I sometimes go without the tomatoes, It's great either way.)

In a large bowl, combine avocado, tomato, onion , lemon juice, garlic, salt and pepper. Using a fork or I use a potato masher. Mash to desired consistency. Serve immediately. I love it served with pita chips.
I think you will like this recipe, I came up with it many years ago, friends and family love it!
