Ready Set Go!

Time is just flying by. Over the years I have finally realized it doesn't get any easier or more kick back and mellow. Time is not always on your side - Ha! We are all getting a little older and wiser. We just keep on adding to our lists of things to do. The pace is killing me somedays. That being said, I love to keep busy and I always like to be active. This year we have decided and have made a pact - Daniel and I, to stop sweating the small stuff, and have some new life changing experiences. A kind of Slowing Down -which we look forward to... I'm not saying our life is or has ever been boring because it's not. I just want to take more time out to enjoy things day to day.

I think 2011 will be an amazing year! I hope it's starting off on the right path for you all!

Up At The Cabin ~ Birthday Getaway


We just got back from our beautiful getaway, celebrating Daniel's birthday. We wanted to go camping for awhile now, however because of our work schedules and not being able to drive hours away, I found the next best thing, renting a cabin about 20 minutes away from us with amazing views, hidden away with tasty dining options and fun adventures about 10 minutes from our cabin to the resort and lodge. My kind of camping, ha! Anyway, it was pure heaven just to getaway and to spend some time together enjoying nature. On the last day we even did some kayaking, which was the first time for the both of us. When we first got into the boat, Daniel in front and myself in back, we thought well this won't be hard! Sure, Daniel took it very seriously and I followed his stride, then a few moments later after going down river, we ran into a swamp and the trees started hitting us in the face - then, we almost flipped. I couldn't stop laughing for some reason I thought it was the most hilarious thing, I don't think Daniel thought it was quite as funny.  All the sudden, we both broke out in laughter and tears. We recovered and did not flip, there was just algae everywhere in the boat. Well, needless to say - we survived and decided to mark that off our bucket list -for good.

Despite all this, Daniel said it was the best birthday he ever had, which makes me so happy!

What An Inspiration - Such A Wonderful Film~

We just saw this movie, It was truly an inspiration. If you haven't seen it yet - I greatly suggest you do. It explains so much about living with Autism. It's the story of Dr. Temple Grandin, a person with highly-functioning autism, noted  bestselling author, doctor of animal science and professor as well as her work as a autism advocate. Actress Claire Danes gives such an electric and powerful performance as Temple Grandin. It's beautifully filmed and I promise after you see it you will be inspired and uplifed.

It's Been A Year This Month ~


 
When I started our blog a year ago this month, I never even imagined what fun and all the enjoyment it would give to me. Starting out as just something to update friends and family on our current interests and experiences, it has become much more than that. Thinking of what I want to create and the ideas for the posts has really kept me motivated and inspired. Some months It seems I have more to say than others but I like to keep things organic and real, my second blog helps to give me an outlet for fashion and design, which is great! So excited about another year for hopefully many more years to come of blogging.  We always appreciate you stopping by and hope you keep enjoying Our Haven Place!

The Kitchen Cupboard, Mediterranean Flavors



Hummus-

12 oz chickpeas, soaked overnight
1 small dried red chili
1/2 teaspoon cumin seeds or ground cumin
salt and freshly ground black pepper
1 clove, peeled
1 1/2 tablespoons tahini ( sesame paste)
4 tablespoons extra -virgin olive oil
fresh lemon juice ( 2 tablespoons)

Rinse the soaked chickpeas and put in a large pot. Cover with water and bring to a boil. Cover the pot and simmer for1 1/2 hours ofr until tender, skimming as necessary. Drain, saving a little of the cooking water.
In a mortar and pestle pond the chili and cumin with teaspoon of salt. In a food processor, finely chop the garlic, then add chickpeas, chili, cumin and  tahini and pulse them until smooth. Add the salt, pepper, oil and lemon juice to taste. If you prefer the hummus a bit thinner, add a little of cooking water until you're happy. Enjoy with pita bread!

Tomato Feta Pasta Salad-

1/2 pound fusilli ( spirals) pasta
kosher salt
good olive oil
1 pound ripe tomatoes, medium -diced
3/4 cup good black olives, such as kalamata, pitted and diced
1 pound good feta cheese, medium -diced
6 sun- dried tomatoes in oil, drained and chopped

For Dressing-
 5 sun- dried tomatoes in oil, drained
2 tablespoons red wine vinegar
6 tablespoons olive oil
1 garlic clove, diced
1 teaspoon capers, drained
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 cup freashly grated parmesan cheese
1 cup packed flat leaf parsley, chopped

Cook pasta in a large pot of boiling water with a splash of olive oil to keep it from sticking. Boil for 12 minutes, or according to package directions. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, feta and chopped sun- dried tomatoes.
For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt and pepper in a food processor until smooth.
Pour dressing over pasta, sprinkle with parmesan and parsley, and toss well. So Yummy and flavorful.

Lamb Burgers-

1 1/2 pounds ground lamb
3 cloves garlic, minced
1 tablespoon minced fresh mint
1 tablespoon minced fresh parsley
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground black pepper
1/4 teaspoon salt
Cucumber Yogurt Sauce ( recipe follows)
5 petite pita rounds
Garnish: sliced cucumber, chopped pistachios if you like, fresh mint

In a large bowl, combine ground lamb, garlic, mint, parsley, cumin, coriander, pepper and salt. Shape mixture into 5 patties.
Preheat grill to medium- high heat (350' to 400' degrees). Spray grill with nonstick nonflammable cooking spray. 
Grill, covered with grill lid, for 7 to 8 minutes on each side, or until an instant- read thermometer inserted in the center of patty reads 160' degrees.
Spread desired amount of cucumber sauce over each pita round. Top each with lamb patty. Garnish with cucumber, pistachios, and fresh mint, if desired.

Cucumber Yogurt Sauce- 

2 cups plain greek- style yogurt
2/3 cup peeled, seeded, and diced cucumber
1/4 cup chopped pistachios
1 teaspoon salt
1/4 teaspoon ground red pepper

In a small bowl, combine yogurt, cucumber, pistachios, salt and pepper. Cover and chill.

Yes, I Found It!


This is our all time favorite painting. Which I just found, finally online. It moved around with us for so many years. It's back in our storage unit in Las Vegas, I miss it so much and it made me so happy to see it again.  It's by the artist Gary Kelly which for some reason I forgot. I love the colors and the beautiful parisan street. Of course I think it's also very romantic. So Lovely!
